What is the +|- button for?

Those buttons let you pick the temperature you want for the water. When the correct temperature is lit, hold the +/- button down a few seconds until it flashes. It will then keep the water at that temperature.

How to use the keep-warm function?

Press and hold the -/+ button for 5 seconds and when the indicator light keeps flashing, it enters the keep warm function mode, You may select the keep warm temperature: 140°F, 158°F, 176°F, 194°F for 6 hours.
